GREEN CHILE STEW 
2 lbs. pork
2-3 med. onions, chopped
4-5 cloves of garlic, minced
2-3 qts. water
1 c. green chile, chopped
4-6 potatoes, cut bite size
1-2 potatoes, grated
Salt and pepper to taste

Cut pork into cubes. Put pork, garlic, and onions in water and simmer, uncovered. Add potatoes, including grated potatoes, and chile; simmer until mixture becomes thick. Cook for 1 to 2 hours. Serve in soup bowls with warm tortillas. Serves 6.

You may add more or less chile depending how "hot" you like it. Old El Paso makes small cans of chopped chile in the Mexican Food section.
