SWISS STEAK 
1 c. flour
1 1/2 lbs. steak
1 (No. 2) can stewed tomatoes
Salt and pepper to taste
1 lg. onion, chopped
2 tbsp. oil
8 carrots, sliced

Pound flour into steak using meat mallet. Season both sides with salt and pepper. Saute onion in hot oil. Add steak; brown on both sides. Place meat and onion in casserole. Add carrots. Beat tomatoes with electric mixer. Pour over carrots. Cover. Bake in preheated oven at 350 degrees for one hour, 30 minutes. Serve over rice.
