CRABMEAT AU GRATIN 
2 sticks butter
1 lg. can evaporated milk
1 tsp. salt
1/4 tsp. black pepper
1 onion
1/2 c. flour
2 egg yolks
1/2 tsp. red pepper
1 lb. crabmeat
1/2 lb. grated American cheese

Saute onion in butter until soft. Blend flour in with this mixture. Pour in milk gradually, stirring constantly. Add egg yolks, salt and peppers. Cook 5 minutes. Turn heat off and stir in crabmeat and cheese. Mix well and transfer to lightly greased casserole dish and sprinkle with grated cheese. Bake at 350 degrees for 10 to 15 minutes or until lightly browned.
