SIX - WEEK MUFFIN BATTER | |
1 (15 oz.) box Raisin Bran cereal 1 c. vegetable oil 3 c. sugar 4 beaten eggs 1 qt. buttermilk 5 c. flour 5 tsp. baking soda 2 tsp. salt 1 (17 oz.) can fruit cocktail, drained 4 tsp. cinnamon Mix cereal, sugar, flour, cinnamon, soda, and salt in large bowl. Add eggs, oil, and buttermilk; mix well. Fold in fruit cocktail. Refrigerate for 1 day before using. Dip out to fill muffin cups (do not stir). Fill greased or paper-liner lined muffin cups and bake 15 to 20 minutes at 400 degrees. |
