EASTCHASE SWEET ONION RICE
CASSEROLE
 
5 c. chopped sweet onions
1/4 c. butter, melted
1 c. cooked long grain rice
8 oz. sour cream
1 c. (4 oz.) shredded Swiss or cheddar cheese

Saute onion in butter in large skillet, until tender. Remove from heat; stir in rice and sour cream. Spread half the onion mixture in 8"x12" pan. Spread with half the shredded cheese. Repeat layers. Cover and bake at 350 degrees for 30 minutes. Uncover and bake an additional 15 minutes or until lightly browned. Yield: 6 to 8 servings.
