STIR-FRIED ASPARAGUS 
1 1/2 lbs. asparagus
2 tsp. finely chopped fresh ginger or 1 1/2 tsp. ground ginger
1 clove garlic, finely chopped
1/4 c. broken walnuts
2 tbsp. dry sherry
1/2 tsp. salt
2 tbsp. peanut or vegetable oil
1/8-1/4 tsp. crushed red pepper
2 tbsp. soy sauce
1/2 tsp. sugar
1/4 c. sweet red pepper

Wash and trim asparagus, slice on the diagonal, making long thin slices. Heat oil in large skillet, stir fry asparagus just until crisp tender, about 2 minutes. Remove from skillet with slotted spoon. Stir ginger, garlic and crushed red pepper into skillet. Add walnuts and sweet red pepper; cook and stir 1 minute. Add soy sauce, sherry, sugar and salt. Return asparagus to skillet toss over high heat just to heat through.
