PINEAPPLE UPSIDE DOWN CAKE 
2 tbsp. butter
3/4 c. brown sugar
Pineapple slices
3 egg yolks
1 1/2 c. sugar
1/2 c. boiling water
1 1/2 c. cake flour (take out 3 level tbsp. if using regular flour
1/4 tsp. salt
1 tsp. baking powder
3 egg whites, stiffly beaten

In heavy skillet melt 2 tablespoons butter and brown sugar. Arrange pineapple slices in mixture. For batter, beat egg yolks until thick and lemon colored. Add 1/2 cup sugar and continue beating. Add water, then fold in 1/2 cup sugar sifted with flour, salt and baking powder. Beat until blended and fold in stiffly beaten egg whites to which the remaining 1/2 cup sugar has been folded. Pour over pineapple in skillet and bake in moderate oven at 350 degrees about 45 minutes. Cool and turn out on a large platter, pineapple side up.
