POTATO COOKIES 
1 c. instant potatoes
1 (6 oz.) pkg. buttermilk mix
3/4 to 1 c. melted butter
1 egg
2/3 c. sugar
1 tsp. coconut flour

Mix dry ingredients first, then add butter, eggs, and flavoring. Blend thoroughly. Roll into balls the size of a pecan. Bake 10 minutes at 325 degrees.
