SQUASH CASSEROLE 
3 or 4 sm. yellow squash
3 or 4 sm. green squash

1 med. onion, sliced into rings
1 med. green pepper, sliced into rings

3 lg. ripe tomatoes, slice or 1 lg. can whole (I crush into chunks)
1 tbsp. oregano
Optional: 1/2 lb. cheese either Colby or cheddar

Layer yellow and green squash, onion, green pepper, tomatoes. Finish with tomatoes on top. Bake at 325 degrees for 1 hour.
