MEXICAN CORN | |
1/4 c. butter, melted 2 c. fresh or frozen corn kernels 1/4 c. chopped green pepper 1/4 c. chopped red pepper 1 tsp. salt 1 c. commercial French fried onions 1 c. cubed fresh tomatoes 1/4 tsp. ground oregano Combine first 5 ingredients in a heavy skillet. Cover and cook over medium heat 7 minutes, stirring occasionally. Stir in French fried onions, tomatoes, and oregano. Cook, uncovered, for 2 minutes or until tomatoes are thoroughly heated. Great with Mexican main dishes! |
