QUICK STRAWBERRY JAM 
2 qt. strawberries
2 tsp. grated orange rind
1 pkg. powdered pectin
7 c. sugar

Crush berries, one layer at a time. Measure 4 1/2 cups berries and orange rind into large kettle. Add powdered pectin with berries and place over high heat. Stir until mixture comes to a full rolling boil. Add sugar all at once and return to rolling boil. Boil hard 1 minute, stirring constantly. Remove from heat and skim off foam. Pour hot into hot jars, leaving 1/4 inch head space. Adjust caps. Process 10 minutes in boiling water bath. Yield: 8 half pints.
