BETSY'S HOMINY CASSEROLE 
2 cans drained hominy
1 lb. Monterey Jack cheese with jalapeno peppers, cubed
1 pt. sour cream
1 tsp. salt

Mix the above in a large bowl. Cook 1 pound yellow squash, 1 large onion (chopped) and 1 stick butter. Simmer until tender. Mix all together and put into a casserole. Top with 1/2 pound cheese, grated and mix with 2 small cello wrapped packages melba toast, crushed. Bake at 350 degrees for 1 hour.
