PEPPER STEAK CABALLERO 
1 1/2 lb. Sirloin steak, cut in narrow strips
1 tbsp. paprika
2 cloves garlic, crushed
2 tbsp. butter
1 c. sliced green onions with tops
2 green peppers, cut in strips
2 lg. fresh tomatoes, diced
1 c. beef broth
1/4 c. water
2 tbsp. cornstarch
2 tbsp. soy sauce
3 c. hot cooked rice

Sprinkle steak with paprika and let stand while preparing other ingredients. Cook steak and garlic in butter until meat is browned. Add onions and peppers. Continue cooking until vegetables are wilted. Add tomatoes and brown; cover and simmer 15 minutes. Blend water with cornstarch and soy sauce. Stir into steak mixture and cook until thickened. Serve over rice.
