VEGETABLE SURPRISE OPEN FACE
SANDWICH
 
4 slices bread, toasted
4 slices bacon
2 tbsp. salad dressing
2 tsp. mustard (or more to taste)
3/4 c. shredded zucchini
1 c. shredded sharp Cheddar cheese
1/2 c. shredded carrot
Pepper slices, thinly sliced
Onion rings, thinly sliced

Cook bacon at 100% power for 3 to 4 minutes or until crisp. Drain and crumble. Spread one side of bread with salad dressing and mustard. Place spread side up on microwave roasting tray or plate. Top each slice of bread with zucchini and 1/2 of cheese. Next top with bacon, carrot, pepper and onion. Top with remaining cheese. Microwave on 100% power, 2 to 4 minutes or until cheese melts. Rotate once during cooking. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
