VEGGIE OPEN FACED SANDWICHES 
2 c. broccoli
1 med. onion
1 1/2 c. grated mozzarella
6 slices toast
1 tsp. oil

1. Chop and saute onion in oil 5 minutes.

2. Chop and add broccoli.

3. Spread on each slice of toast.

4. Sprinkle mozzarella on top.

5. Put under broiler until cheese melts, 2-3 minutes.
