WHITE FRUIT CAKE | |
1/2 lb. white raisins 1 lb. mixed fruit, dried 1/4 c. strawberry or pineapple preserves 1 1/4 c. orange juice 1/4 c. pineapple juice 2 c. butter 2 c. sugar 9 eggs 4 c. flour 1 tsp. salt 1 tsp. vanilla 1 c. nuts Mix raisins, dried fruit, preserves, orange juice and pineapple juice and let it stand overnight. Cream butter and sugar. Having eggs at room temperature, beat until very thick. Then add to the sugar-butter mixture. Take 1 cup of the flour and add it to the soaking fruit. To the batter add the vanilla and the three cups of flour. Mix and then add soaking fruit and then, the nuts. Bake in greased and floured pans for 1 hour in a 300 degree oven. |
