FRESH APPLE CAKE 
3 c. all-purpose flour
1 tsp. salt
1 tsp. baking soda
1 1/2 tsp. cinnamon
1 tsp. nutmeg
1/4 tsp. allspice
4 c. diced apples (I use Red Delicious)
1 c. chopped pecans
3 eggs
2 c. sugar
1 tsp. vanilla flavoring
1 1/4 c. oil

Mix together flour, salt, soda, cinnamon, nutmeg, and allspice. Add apples and pecans. Beat eggs, sugar, and vanilla flavoring. Add oil. Then add to apples, nuts, flour mixture. Mixture will be very stiff. Bake at 325 degrees for 1 hour or until toothpick comes out clean.

This recipe will make a large, bundt cake or two loaf cakes.
