BROCCOLI CASSEROLE 
2 pkgs. chopped broccoli
3 eggs, separated
1 tbsp. flour
1 c. mayonnaise
1 tbsp. butter
1/4 tsp. salt and pepper
1/4 c. Parmesan cheese OR Cheez Whiz if family likes more cheese taste
Pinch of nutmeg

Cook broccoli and drain. Beat egg yolks; add flour and mix well. Stir in pinch of nutmeg, mayonnaise, butter, salt and pepper, and cheese. Add broccoli and mix lightly.

Beat egg whites until stiff, but not dry (should be room temperature) and gently fold in broccoli mixture. Pour into oiled pan or 9-inch dish. (May add little chopped onion.) Bake at 350 degrees for 30-40 minutes or until browned and set. Cut in squares.
