FRESH APPLE CAKE 
2 c. unpeeled, chopped apples
1 egg, beaten
1 tsp. vanilla
1/2 tsp. salt
1 tsp. baking soda
1 c. sugar
1/2 c. cooking oil
1 1/2 c. unsifted flour
1/2 tsp. nutmeg or cinnamon

Blend sugar with apples and let stand 30 minutes. Add beaten egg, oil, and vanilla to apple and sugar mixture. Add all dry ingredients and stir until well blended. Bake in preheated 350 degree oven in greased 8 x 8 x 2 inch or 7 x 11 x 2 inch pan for 25 to 40 minutes.
