FROSTED APPLE-WALNUT CAKE 
3 eggs
2 c. sugar
1/2 c. vegetable oil
2 tsp. vanilla
2 c. all purpose flour
1/2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. ground nutmeg
A pinch of salt
4 c. diced, unpeeled apples
1 c. coarsely chopped nuts

In a mixing bowl, combine eggs, sugar, oil and vanilla. Add flour, soda, cinnamon, nutmeg and mix. Fold in apples and nuts. Spread in a 13"x9" pan. Bake at 325 degrees for 50 or 60 minutes.

ICING:

2 (3 oz.) pkgs. cream cheese, softened
1/4 c. butter
1 1/2 c. powdered sugar
1 tsp. vanilla

Combine ingredients in a bowl and whip until smooth. Spread on cake and sprinkle with a small amount of nuts over icing.
