COCONUTTY OATMEAL COOKIES 
1 c. shortening
1 c. brown sugar, firmly packed
2 eggs
1 1/3 c. flour
1 1/2 c. oatmeal
1 tsp. salt
3/4 tsp. baking soda
1 tbsp. warm water
1 tsp. cinnamon
1/2 tsp. ginger
1 c. coconut
1 c. chopped pecans or walnuts

Preheat oven to 350 degrees. Cream shortening and brown sugar. Add eggs, dry ingredients in small portions, blending well after each addition. Dissolve baking soda in warm water and add to mixture. Stir in coconut and chopped nuts. Drop onto lightly greased cookie sheet and bake about 10 minutes or until golden brown. Makes about 48 medium size cookies.
