BURNT SUGAR CAKE 
2 c. sugar
1 c. boiling water
2 3/4 c. sifted flour
2 3/4 tsp. baking powder
1/4 tsp. baking soda
1/2 c. butter, softened
1 1/2 c. sugar
3 eggs, beaten
3/4 c. water

Melt sugar in heavy saucepan or skillet over medium heat while stirring constantly until brown. Remove from heat and add boiling water gradually while stirring. Being careful not to get burned. Return to heat and boil for 5 minutes. This makes enough burnt sugar syrup for 3 layers and icing.

Sift flour, baking powder and soda. In a bowl cream butter and the 1 1/2 cups sugar. Add 3 beaten eggs and 3/4 cup water. Add flour mixture to batter in 3 or 4 tablespoons of burnt sugar syrup. Bake in 2 greased and floured 9 inch layer cake pans at 350 degrees for 35-40 minutes in 3 layer cake pans for 25-30 minutes.

BURNT SUGAR FROSTING:

1 1/2 c. powdered sugar
1/3 c. heavy cream, whipped
2 tbsp. burnt sugar syrup

Beat powdered sugar and syrup together. Stir in whipped cream.
