FRUIT PIZZA 
1 c. vegetable oil
1 c. butter
2 lg. eggs, beaten
1 tsp. vanilla extract
1 c. powdered sugar
1 c. sugar
4 c. flour
2 tbsp. flour
1 tsp. cream of tartar
1 tsp. baking soda
1/4 tsp. salt
4 1/2 oz. Cool Whip, thawed
8 oz. cream cheese, soft
1/2 c. sugar
1 tbsp. cornstarch
1/2 c. orange juice
1/4 c. water
2 tbsp. lemon juice
Dash of salt
Any combination of fruit

Preheat oven to 400 degrees. In a mixing bowl, cream together the oil, butter, eggs, and vanilla. Add powdered sugar, 1 cup sugar, flour, cream of tartar, and 1/4 teaspoon salt; stir well. Spread dough into a pizza pan. Bake for 10-12 minutes.

Let cookie crust cool. Combine Cool Whip, cream cheese and spread over the cookie crust. Arrange fruit on top.

In small saucepan, mix 1/2 cup sugar, cornstarch, dash of salt. Add orange juice, lemon juice, water and lemon rind; stir to blend. Boil until slightly thickened. Let juice mixture cool, pour over fruit. Chill before serving.
