FRUIT PIZZA 
1 c. vegetable oil
1 c. butter (2 sticks)
2 eggs, beaten
1 tsp. pure vanilla extract
1 c. powdered sugar
1 c. sugar
4 c. + 2 tbsp. flour
1 tsp. cream of tartar
1 tsp. baking soda
1/4 tsp. salt
4 1/2 oz. Cool Whip, thawed
8 oz. cream cheese, softened
Cherries, pitted
Bananas, sliced
Peaches, sliced
Crushed pineapple
Or any combination of fruit that you desire
1/2 c. sugar
1 tbsp. corn starch
Dash of salt
2 tbsp. lemon juice
1/4 c. water
1 tsp. lemon rind

Preheat oven to 400 degrees. In a mixing bowl, cream together the vegetable oil, butter, eggs and vanilla extract. Add the powdered sugar, 1 cup of sugar, flour, cream of tartar, and 1/4 teaspoon salt; stir well to thoroughly combine all ingredients. Using your fingers, spread the dough onto a pizza pan. Bake for 10 to 12 minutes.

After the cookie crust has cooled, combine the Cool Whip and cream cheese, and spread over the cookie crust. Arrange the fruits of your choice on top of the Cool Whip - cream cheese layer.

In a small saucepan, mix together 1/2 cup sugar, corn starch, and a dash of salt. Add the orange juice, lemon juice, 1/4 cup of water and lemon rind; stir to thoroughly blend. Boil until slightly thickened. Cool the juice mixture, then pour over fruit layer. Chill before serving.
