RED VELVET CAKE 
2 1/2 c. self-rising flour
1 c. buttermilk
1 1/2 c. vegetable oil
1 tsp. baking soda
1 tsp. vinegar
1/4 tsp. baking powder
1 1/2 c. sugar
1 tsp. salt
1 tsp. cocoa
1 oz. red food coloring
1 tsp. vanilla

Mix all ingredients together and bake 3 layers at 325°F for 15 minutes or until done.

Cream Cheese Frosting:

1 1/2 stick butter
1 1/2 (8 oz.) cream cheese
1 1/2 box 10x sugar
1 tsp. vanilla
1 c. pecans

Mix all together, adding pecans last and spread over layers.
