STEAK KEW 
6 tbsp. peanut oil
8 to 10 Chinese mushrooms
1 flank steak
2 cloves garlic
4 slices ginger, shredded
2 tbsp. chopped scallion
2 tbsp. oyster sauce
2 tbsp. light soy sauce
1 tsp. sugar
4 tsp. cornstarch
1/2 lb. snow peas
1 tsp. salt

PREPARATION: Cut steak into 1 inch cubes and mix with garlic, ginger, scallion, oyster sauce, light soy sauce, sugar and cornstarch. Marinate 15 to 30 minutes. Rinse Chinese mushroom. Cover with warm water and soak for 15 minutes, drain and quarter. Remove tips from snow peas, what and drain. Add snow peas to 1 quart boiling water and when it comes to a boil again, drain immediately and run cold water over pods and drain.

COOKING: Heat peanut oil, add Chinese mushrooms, stir fry 1/2 to 1 minute. Add all remaining ingredients except snow peas and salt. Stir fry 1 to 2 minutes. Add snow peas, mix well. Stir in salt. You can also add bamboo shoots and water chestnuts at this time. Pour into dish and serve hot.
