CINNAMON BREAD 
BASIC DOUGH:

2 dry yeast
1/4 c. warm water
1 3/4 c. skim milk
2 1/2 tbsp. sugar
1 tsp. salt
5 1/2 c. flour
2 tbsp. oil

Dissolve yeast in water. Mix sugar and milk together. Stir into yeast. Add salt and 3 cups flour. Beat smooth. Add oil. Gradually add remaining flour to stiffen dough. Knead until elastic. Place dough in greased bowl. Rise until double. Roll dough. Spread with 1 stick melted butter. Sprinkle with cinnamon and sugar. Roll jelly roll style. Cut into 2, pinch ends together and tuck under. Place in 2 oiled loaf pans. Rise. Again. Bake 350 degrees for 30 minutes.
