CREAM CHEESE CHOCOLATE MINT BROWNIES | |
3 oz. cream cheese, softened 1/4 cup butter, softened 1/2 cup sugar 2 eggs 2/3 cup all-purpose flour 1/2 teaspoon baking powder 1/4 teaspoon salt 1/3 cup chopped nuts 1 unsweetened baking chocolate squares, melted and cooled 1/2 teaspoon peppermint extract green food coloring Chocolate Glaze: 1 unsweetened baking chocolate square 1 tablespoon butter 1 cup powdered sugar, sifted 1/2 teaspoon vanilla 2 tablespoon boiling water Cream together cream cheese, butter, and sugar; beat in eggs. Whisk together flour, baking powder, and salt; stir into creamed mixture. Spoon half of the batter into another bowl; stir in nuts and chocolate. Add peppermint extract (and a few drops of green food coloring) to the white batter and transfer batter into baking pan. Add chocolate batter with nuts and swirl the two batters together; do not mix. Bake at 375°F until done (about 15-25 minutes; a cake tester will come out "nearly" clean. Cool; pour Chocolate Glaze over top. Cut into bars. Chocolate Glaze: Melt one 1-ounce square unsweetened chocolate and 1 tablespoon butter over low heat; stir constantly. When butter has melted, stir in powdered sugar, vanilla, and water.
