PEACH DELIGHT 
3 egg whites
1/2 c. chopped pecans
1/4 tsp. baking powder
1 c. sugar
1/2 c. soda crackers finely crushed (about 10)
1 tsp. vanilla

Beat egg whites until stiff. Fold in sugar, baking powder, vanilla, pecans and crackers. Pour into buttered 11x7 inch pan. Bake at 325 degrees 30 minutes. Cool.

TOPPING:

1/2 pt. whipping cream (whipped)
1 tbsp. powdered sugar
1 lg. can sliced peaches, well drained (raw peaches are best)

Add sugar to whipped cream. Fold in peaches. Spread over crust and refrigerate until ready to serve. (For 9x13 pan I use 1 1/2 recipe.)
