SWISS STEAK 
1 1/2 lbs. round steak, (3/4 inch thick)
2 tbsp. flour
Salt and pepper to taste
1 med. onion, sliced
1 carrot, cut in 2 or 3 pieces (or 2 or 3 carrots)
1 sm. stalk celery, chopped
1 (15 oz.) can tomato paste or 2 cups
Tomato juice or V-8 juice or 15 oz. can of stewed tomatoes

Cut round steak into serving pieces. Season flour with salt and pepper. Dredge meat in seasoned flour. Place onions in bottom of crockpot; add meat. Top with carrots and celery and cover with tomato sauce. Cover and cook on low 8 to 10 hours. (High 3 to 5 hours). I also add 2 or 3 potatoes cut in serving size pieces.
