SHANNON FRUIT COMPOTE | |
1/2 c. sugar 1 1/2 c. water 3 med. size firm, ripe pears, peeled & cut into 1/2" pieces 12 dried apricot halves, each cut into 6 pieces 2 med. size seedless oranges, peeled & cut into bite size pieces 3 1/4 c. fresh cranberries Combine sugar and water in a large saucepan; bring to a boil. Add peas and dried apricot halves; reduce heat and simmer, uncovered 5 minutes. Add orange pieces; simmer 2 minutes. Add cranberries; cook over medium heat 5 minutes, stirring occasionally. Serve compote warm. Yield: 10 servings (about 102 calories per 1/2 cup serving). |
