COCKTAIL QUICHES 
1 c. (4 oz.) shredded cheddar cheese
2 eggs, beaten
1/2 c. half & half milk
1/4 tsp. salt
1/2 tsp. pepper
1/8 tsp. ground nutmeg
Dash of hot sauce

Spoon cheese into shell evenly over bottom. Combine remaining ingredients, stir well. Pour into shells filling 3/4 full. Bake at 350 degrees for 30 to 35 minutes or until set. Yield: 3 dozen appetizer servings.
