SPINACH PUFF 
1 pkg. chopped frozen spinach
1 tbsp. minced green onion
3 eggs, beaten
1/2 c. sour cream
1 c. grated Parmesan cheese
1 tbsp. all purpose flour
2 tbsp. butter
1/8 tsp. nutmeg
1/4 tsp. salt
Dash of black pepper

Cook spinach according to the package adding onion as it cooks. Drain well. Fold in eggs and sour cream. Blend in cheese and flour. Stir in butter, nutmeg, salt, and pepper. Turn into a well buttered 1 quart casserole or souffle dish. Bake at 350 degrees for 25-30 minutes.
