3 c. sugar 1/2 c. white syrup 2/3 c. water 2 egg whites pinch of salt 1 tsp. vanilla walnuts or pecans (optional) In small bowl, beat egg whites with salt (speed 7). Transfer egg whites to large bowl. Place on revolving stand. Pour gradually, beating constantly. Pour in fine stream. After all syrup is added, increase speed. Beat until mixture has glossy stage. Add vanilla. Beat at speed 3 until mixture forms peaks. It is ready when tested by dropping teaspoon of hot mixture into a cup of water reaches medium hard-ball stage. Add walnuts or pecans, if desired. Pour into buttered Pyrex dish and cut into squares or drop from teaspoon. Hint: Measure and follow directions precisely. |
