SPEEDY NO EGG COCOA SNACK CAKE 
1 1/2 c. all purpose flour
1 c. sugar
1/2 c. unsweetened cocoa powder
1 tsp. baking soda
1/2 tsp. salt
1 c. water
1/2 c. vegetable oil
2 tbsp. white vinegar
2 tsp. vanilla extract

Mix flour, sugar, cocoa, baking soda and salt in a bowl. Mix remaining ingredients in another bowl. Stir together until well blended. Microwave in an 8" or 9" safe pan 6 1/2 to 7 minutes, rotating dish 1/4 turn twice. Serve warm or room temperature.

Since microwave ovens vary in power, you may need to adjust your cooking time.
