3 1/2 c. sauerkraut, drained
6 c. diced cooked potatoes
2 hard boiled eggs, chopped
3/4 c. mayonnaise
1/2 tsp. paprika
Salt and pepper to taste

Combine sauerkraut, potatoes, and eggs. Toss lightly. Add remaining ingredients and toss lightly and chill. You may also add diced onions or peppers or celery.
