CHOCOLATE TRUFFLES 
12 oz. good quality milk chocolate
1/3 c. heavy whipping cream
1/4 c. raspberry flavored liqueur (or any other liqueur or whisky)
Confectioners sugar

Break chocolate into very small pieces. Place in mixing bowl. In small saucepan, combine cream and liqueur. heat just to boiling. Immediately pour over chocolate pieces. Beat by machine or hand until smooth. Chill 1 to 2 hours until firm. Roll between palms of hands into 1 inch balls. Roll truffles in confectioners sugar. Makes about 2 dozen truffles.
