DOWN HOME PEACH PIE 
5 lbs. peaches (about 14 lg. peaches)
1/4 c. quick tapioca
2 tbsp. lemon juice
1 tsp. ground cinnamon
1/8 tsp. ground ginger
1 c. sugar
Butter
1 egg yolk, beaten
Pastry shells, unbaked

Mix all ingredients and fill large flaky pastry. Bake at 425 degrees until firm and brown, 25-30 minutes. You might need two pastries for this amount of mixture. Also a pastry shell on top is optional.
