FUNNEL CAKES 
2 c. plain flour
1 tsp. baking powder
1/2 tsp. salt
Cooking oil
2 eggs
1 1/2 c. milk
Powdered sugar

Mix flour, baking powder, salt, eggs and milk together. Heat cooking oil in a deep fryer or skillet until very hot. Put batter into a funnel (be sure to cover spout with finger). Holding funnel over hot oil release some of the batter in a circular motion, then criss-crossing motions to form a funnel cake. Cake will expand quickly - be careful. Cook to light brown. Remove from oil and place on paper towel to drain. Sprinkle with powdered sugar. Serve warm.
