QUICK PRALINE CANDY | |
1 pkg. of either (butterscotch or chocolate) pudding and pie filling (not the instant kind) 1 c. sugar 1/2 c. brown sugar 1/2 c. evaporated milk 1 tbsp. butter Have ready 1 1/2 cup pecans or less. Mix, pudding mix, sugars, milk and butter in a large pot (fairly heavy) so there will be less chance of scorching. Cook and stir continuously over low heat, until sugars are dissolved and mixture boils. Continue to cook, stirring gently and start testing doneness with several drops in cold water. Fresh water each time you test. When it forms a soft ball that you can pick up in your fingers, remove from heat. Add nutmeats, and start to beat candy until it starts to thicken no longer. Quickly drop by tablespoons on wax paper that has a terry towel (have paper ready ahead of time) under it to make it easier to remove from the wax paper after it has hardened. Makes 18 or 20 pieces. |
