FRENCH OMELET 
3 eggs
Ham, bacon or sausage
Sm. onion
Bell pepper
Mushrooms
Cheese
1 tsp. butter

Beat eggs in bowl and set aside. Brown small pieces of meat, onion, pepper and mushrooms. Pour into another small bowl.

In skillet pour eggs and 1 teaspoon butter and cook on one side. Done not scramble or turn over until one side is done. Turn. Pour in meat mixture. Fold eggs over it. Top with cheese; slide onto plate.

This is excellent omelet. I eat this often at local cafe - but am glad to see this posted. Always a side of tomato slices or even a dollop of ketchup spread over. Yum!
