HAM FRIED RICE 
1/2 c. fried ham, diced
1 onion, chopped
4 or 5 celery, chopped
12 fresh white mushrooms, sliced
2 tbsp. butter
6 eggs
3 1/2 c. cooked minute rice
1/2 c. soy sauce
1/2 c. water

Crumble bacon; fry onion, celery and mushrooms in butter, on high heat, stirring frequently until tender. Scramble eggs and add all ingredients, frying on medium high, stirring until liquid evaporates. Serve hot. Yield: 6 servings.
