HAM AND RICE STIR FRY 
1 box Success Rice
1 c. sliced green onions
1 c. thinly sliced celery
2 tbsp. peanut oil
4 oz. can mushroom pieces and stems, drained
1 c. frozen peas
1/4 c. sliced ripe olives
6 3/4 oz. can Hormel chunk ham flaked with fork
2 lg. eggs, beaten
1 tbsp. soy sauce

Cook rice according to package directions; drain and set aside. Saute onions and celery in oil until tender and crisp. Add mushrooms, peas, ripe olives and ham. Cook 3 or 4 minutes. Push mixture aside in pan. Scramble eggs and rice and soy sauce. Toss lightly with ham mixture until completely heated.
