SCALLOPED DANDELIONS 
2 tbsp. bacon drippings
2 tbsp. flour
3/4 c. water
2 c. milk
3/4 tsp. salt
1 tbsp. vinegar
2 tsp. sugar
1 c. dandelion greens
1/4 c. minced onion
2 hard boiled eggs, sliced

Combine the drippings and flour in a skillet and cook, stirring, until lightly brown. Add the water, milk, salt, vinegar and sugar. Chop dandelion greens and mix with onion. Add the sauce, but do not cook after adding. Add eggs last. Do not use dandelions with flowers. 6 servings.
