CRAZY CRUST PIE WITH YOUR CHOICE OF FRUIT FILLINGS | |
Preheat oven to 425 degrees. CRAZY CRUST: 1 c. all-purpose flour 2 tbsp. sugar 1 tsp. baking powder 1/2 tsp. salt 3/4 c. water 2/3 c. solid vegetable shortening 1 egg FILLING: If you choose apple filling use: 1 tbsp. lemon juice 1/2 tsp. apple pie spice or cinnamon Crust: In a small mixer bowl, combine flour, sugar, baking powder, salt, water, shortening and egg. Blend well at low speed, beat 2 minutes at medium speed. Spread batter in 9 or 10 inch deep dish pie pan. Carefully spoon your choice of filling into the center of the batter. Do not stir. Bake at 425 degrees for 40 to 45 minutes or until crust is golden brown. PUMPKIN FILLING: In mixing bowl, combine: 3/4 c. sugar 1/2 tsp. salt 1/2 tsp. cinnamon 1 can (5 1/3 oz.) or 2/3 c. evaporated milk Beat until well blended. Spoon into center of crust and bake as above. MINCEMEAT: In mixing bowl combine: 1 tbsp. lemon juice 1/2 tsp. cinnamon You could also use blueberry or cherry ready to use pie filling. |
