PICKLED BEETS 
3 c. vinegar
2 c. water
Red beets, cooked & peeled
2 c. sugar
1 tbsp. salt
Pepper (to taste)
Pickling spice (to taste)

Cook vinegar, water, sugar, salt and spices to a boil. Add beets; bring to a boil again and put in sterilized jars and seal. Makes about 8 pints.
