PICKLED BEETS 
1 lb. sliced beets, canned or cooked
3/4 c. beet liquid
3/4 c. cider vinegar
3/4 c. sugar
1 1/2 tsp. pickling spice
10 whole cloves
1 sm. onion, sliced (optional)

Combine beet liquid, vinegar, sugar and seasonings, in sauce pan. Bring to boil, reduce heat and continue boiling 1 to 2 minutes. Put beets into jars, pour boiling mixture over beets. Cool. Seal and refrigerate.
