2 - 3 chicken breasts 1 box chicken flavor Rice-a-Roni 1 jar marinated artichoke hearts 1/2 c. mayonnaise (add more if needed) Dash of curry powder 2 - 3 sm. green onions Black olives, mushrooms, pecans (optional) Cook chicken in seasoned water until tender (celery stalk, carrot, salt, black pepper, etc.) Remove skin and bone. Cut chicken in bite size pieces. While chicken is cooking, prepare Rice-a-Roni according to directions on box. Drain artichoke hearts, saving the marinade. Chop artichoke hearts. Slice thinly, the green onions (black olives and mushrooms if used). Mix mayonnaise with marinade, add dash of curry powder. Mix all ingredients together, tossing lightly. Refrigerate several hours before serving. It keeps for at least a week and seems to get better. This should serve 4. To extend recipe to feed more, add more chicken and extra plain rice. |
