OATMEAL CAKE 
Cake:

1 1/4 c. hot water
1 c. oats
1 c. brown sugar
1/2 c. shortening
1 c. white sugar
2 eggs
1 1/3 c. flour
1 tsp. cinnamon
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt

Pour water over oats; let stand 20 minutes. Cream the sugars and shortening. Add oats mixture and eggs. Add flour, cinnamon, baking soda, baking powder, and salt. Beat until well moistened.

Spray 9 x 13 inch cake pan lightly with non-stick spray.

Pour batter into pan and bake at 350°F for 30 to 35 minutes.

Topping:

1 c. brown sugar
1/4 c. cream
1 c. coconut
1/2 c. chopped nuts
6 tbsp. melted butter
1/2 tsp. vanilla

Mix topping ingredients until smooth. Spread on cake and put under broiler 2 to 3 minutes.
