SWEET RICE PUDDING 
1 c. rice, rinse if desired
3 c. water
3/4 to 1 c. sugar
1 1/4 c. milk
1 egg (optional)

Bring 3 cups water to a boil. Add rice. Cook 20 minutes, low boil, covered. Add sugar and 1 cup milk. Beat 1 egg with 1/4 cup milk, bring back to a boil for 2 minutes. Remove from heat and cover. Rice will absorb any excess milk.
